Tomatoes not only can help lower cholesterol; they also contain phenylalanine, an essential amino acid that’s important in the function of the kidneys and bladder. Phenylalanine has been found to boost energy levels, help

•Bell Peppers are an excellent source of vitamins C and A. A single cup provides 20% or more of the daily recommended value.
•Cucumbers are part of the family of vegetable that may assist the immune system and help lower blood cholesterol.
•Eggplant is anti-oxidant rich , and is a good source of potassium, vitamin A, vitamin B-complex and vitamin C. Eggplant’s texture and bulk has made it popular as a meat substitute.
