Cheesy Bell Pepper Dip
Quick <20 min.
Sauce

* 1 t olive oil
* 2 garlic cloves, crushed
* 1/2 c basil leaves, fresh
* 2 t lemon juice
* broccoli flowerets, cauliflower, carrot sticks, snow peas, cherry tomatoes
* 1 red onion, small, quartered
* 1/2 c sweet red peppers, roasted
* 6 oz cream cheese, nonfat

In a small no-stick frying pan over medium heat, warm the oil. Add the onions and garlic. Cook, stirring constantly, for 6 to 8 minutes, or until soft; do not let the garlic brown. Transfer to a food processor. Add the peppers and basil. Process until smooth. Add the cream cheese and lemon juice; process until just blended.
Makes 8 servings.


Avocado Salsa
Quick <20 min.
Sauce

* 1 Medium avocado
* 1 Tomato, large and ripe
* 1/4 c Red onion, finely chopped
* 2 cloves Garlic, minced
* 2 T Fresh cilantro, chopped
* 1 Large Lime (juice of)
* 1/2 t Cumin, ground
* 1/2 t Ground black pepper
* 1/2 t Salt

In medium bowl combine all ingredients; toss well and maintain chunky consistency.
Serves 12.


Cucumber-Avocado Dip

Ingredients:
*1 tomato
*2 cucumbers
*2 cups sour cream
*1 package dried Italian salad dressing mix
*1 avocado, peeled and diced

Peel, seed and dice tomato. Peel, split lengthwise, seed and dice cucumbers.
Thoroughly drain all liquid from tomato and cucumbers. Mix all the
ingredients and chill before serving.

Serve with chips or vegetables.
Also good as a dressing for chicken salad.


Hot Cucumbers in Cream Sauce

Ingredients
*1 large garlic clove, minced
*1 T olive oil
*2 cucumbers (approx. 1 lb), peeled, seeded, and cut into 2" strips
*1 T white wine vinegar
*2 T heavy cream
*1 1/2 T snipped fresh dill

In a heavy skillet, cook garlic in oil over low heat, stirring, until it
begins to color. Add cucumbers and cook over medium heat, stirring, until
cucumbers are tender and wilted. Stir in vinegar and cream and cook,
stirring, for 3 minutes or until thickened slightly. Remove from heat and
stir in dill, and salt & pepper to taste.
