Nonna Maria taught Rocco to make her signature tomato pasta sauce, stressing the importance of using the finest ingredients. Together, they handpicked the best, most vibrant tomatoes. Rocco now carries on her legacy, crafting sauces with the same dedication and love for tradition she instilled in him.


Ingredients

14 oz Rocco Reds™ Tomatoes
• 1/4 cup olive oil
• 1 onion, diced
• 2 garlic cloves, minced
• 1 tsp dried oregano
• 1 pinch red pepper flakes
• 1/2 cup fresh basil leaves


Directions

1 Heat oil in a large saucepan over medium heat, add onion and cook until it becomes soft.

2 Add garlic and cook until fragrant about 1 minute, do not overcook as mixture will become bitter. Stir in tomatoes, oregano and red pepper flakes, season with salt to taste.

3 Lower the heat and simmer covered for 15 minutes. Then, remove the lid, add basil, and cook uncovered over low heat, stirring occasionally, for 30 minutes.
