Baking a sweet and savory galette is the latest trend foodies are just falling in love with this year. Galettes are a versatile dish that you can enjoy for breakfast, lunch and dinner. They can be fancy or incredibly simple, like this Tomato & Herb Galette from Prashi Srivastava, but even the easiest are absolutely delicious!
Before we get into this tasty recipe for fresh tomato galette, you might be wondering what exactly is a galette anyway? We’re glad you asked!
Galette is a favorite in French cuisine, the name deriving from the Norman word for a flat pasty. It’s a bit of a loose culinary term: there are sweet desert galettes filled with fresh fruit, there are crepe-style galettes pronounced “kaletez,” and there are savory galettes like the one Prashi is sharing.
A homemade galette made with fresh tomatoes is like a gourmet healthy pizza that’s a little bit lighter and a lot easier to make. With goat cheese, fresh basil, oregano and parmesan cheese, Prashi’s fresh tomato galette recipe will find its way into your home’s cookbook in no time!
For the right mix of sweet and savory flavor to make this rustic dish sing, Prashi uses a vibrant mix of Pure Flavor’s® Sangria® Medley Tomatoes. All the bright colors of the rainbow make this a healthy lunch recipe kids love. It’s also a party pleasing appetizer for your next dinner party or get together.
Sangria® Medley Tomatoes come in several convenient sized packs that are resealable and recyclable, so make sure you pick up an extra pack when making this recipe so you and your kids can snack away all day.
Snacking on these tiny tomatoes can help you keep a healthy balance of important vitamins and nutrients like fiber, potassium and iron. You’ll also benefit from incorporating Sangria® into your cooking recipes, like this Tomato & Herb Galette. In fact, some studies suggest that the amount of the antioxidant lycopene your body absorbs is increased when you cook tomatoes.
If you’re looking for a simple way to enjoy the health benefits of these delicious tomatoes in a recipe that only has five steps, Prashi’s homemade galette recipe is perfect for you.
Start by preheating your oven to 400°F. Slice one pint of Sangria® Medley Tomatoes and place them on a baking sheet lined with parchment paper. Roast the tomatoes in the oven for about fifteen minutes until you notice they’ve released most of their juice. Remove the roasted tomatoes and set aside.
The second step is to roll out some pie crust on another baking sheet that’s been lined with parchment paper. You can use your own pie crust recipe, but since we’re keeping this recipe extra simple, a pre-made crust works just fine. If using a pre-made crust, make sure it’s thawed out before continuing.
Spread goat cheese over the center of the crust and then cover with parmesan cheese. Freshly grated parmesan cheese will give you the most gourmet flavor to complement the rich tomatoes.
Layer the roasted tomatoes over the parmesan and goat cheese, and then season with salt and pepper. Add a bit more parmesan because, well, who doesn’t love more parmesan cheese?
Fold in the sides of the crust for that gorgeous, rustic French presentation that makes galettes so iconic. Then, sprinkle some everything bagel seasoning over top. This seasoning is typically a mix of poppy seeds, white and black seeds, dried garlic and onion, and salt.
Finally, whisk an egg with a tablespoon of water to brush over the crust. Bake the fresh tomato galette in the oven for 35 to 40 minutes. When it’s ready, let it rest for twenty minutes before cutting in.
When you’re ready to enjoy this delish dish, garnish with fresh basil and invite everyone to share some great food together!
