The holidays are almost upon us and with all the hustle and bustle of the season, you definitely don’t want to leave planning your holiday meals to the last minute! They say that breakfast is the most important meal of the day and we couldn’t agree more! The key is to make sure you use fresh ingredients and incorporate some veggies into the mix. Christmas mornings can be hectic, but with a little bit of planning, you can surprise and delight your family with an amazing breakfast spread.
Our first super simple recipe is this delicious Fresh Breakfast Sandwich. It features our award-winning Tomatoes On-the-Vine that infuse this sandwich with unmistakably fresh flavor. They are high in iron, cholesterol free and are a good source of potassium.
Paired with some fresh fruit and a quality cup of coffee, it’s a very satisfying way to fuel up after opening presents on Christmas morning.
It’s such a simple meal to put together. We purchased premade, savory biscuits (but scones will do too) and built it with some eggs, back bacon (that cooks up quickly with less mess than traditional bacon), sliced cheddar cheese, avocado and our amazing tomatoes. But that’s not all! We made an incredible honey mustard butter to tie all of the flavors together.
If you’re a little more adventurous, you’ll want to check out our Mexican Chilaquiles recipe! This dish is one of the most popular breakfast dishes in Mexico. It’s full of delicious flavors and fresh veggies to start Christmas Day off right!

Once it’s ready to be served, top with the pico de gallo, some sour cream, avocado and if you’re like us, extra hot peppers!

That is why we have put together some incredible salads that not only stand up on their own but also pair well with those traditional main staples.
