Bell Pepper and
- 6 count Pure Flavor® Sweet Bell Peppers, chopped
- 2 lbs red potatoes, chopped
- 1 white onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Thyme leaves, for garnish
- Salt and pepper to taste
Heat oil in a large pan. Add potatoes and cook on medium heat for 10 minutes.
Add peppers, onions, and garlic. Sauté until onions and peppers are tender and onions are soft.
Plate the potato pepper hash and garnish with thyme leaves.
Top with 2 poached eggs, optional.
