  • 2 dry pints Pure Flavor® Cloud 9® Bite-Sized Fruity Tomatoes
  • 6 slices bacon, diced
  • 3 egg yolks, beaten
  • 2 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 12 oz fettuccine noodles
  • ½ cup Parmesan cheese, grated
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste


Step 1

Cook pasta in salted water according to package directions. Drain, reserving 1 ½ cups of cooking water.

Step 2

While pasta is cooking, fry bacon in a large skillet over medium-high heat until crispy, then remove from pan. Reserve 2 tablespoons of drippings in the skillet.

Step 3

Add tomatoes to the skillet and cook until softened, stirring often. Add shallots and garlic to the pan and cook for another 2 minutes.

Step 4

Add bacon to incorporate, then add 1 cup of the reserved cooking water.

Step 5

Remove from heat & stir in cooked pasta. Quickly stir in beaten egg yolks until thoroughly combined.

Step 6

Return skillet to medium-low heat and cook, stirring constantly, until sauce is slightly thickened.

Step 7

Remove from heat and stir in Parmesan cheese until cheese is melted. Season with salt & pepper to taste.

Step 8

Garnish with chives and parsley to serve.

Pro Tip

For saucier pasta, add additional reserved pasta water as desired.
