- 1 red Pure Flavor® Sweet Bell Pepper, diced
- 1 yellow Pure Flavor® Sweet Bell Pepper, diced
- 2 Pure Flavor® Mini Cucumbers, diced
- 1 carrot, diced
- 2 cups elbow pasta
- 1 cup mayonnaise
- 1 tsp paprika
- 1 tsp dried parsley
- 1 tsp sugar
- ½ tsp black pepper
Prepare pasta al dente according to package instructions. Drain and rinse with cold water. Transfer to a large bowl.
Add carrots, peppers and cucumbers into the bowl.
In a different bowl, mix mayonnaise, paprika, parsley, sugar and black pepper. Add mixture into main bowl and combine.
