Ingredients

  • 1.75 lb Pure Flavor®Baby Eggplants, sliced
  • 2 eggs, beaten
  • 1 cup Italian breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • ½ cup grated Parmesan cheese
  • 3 tbsp Olive Oil
  • Salt and pepper, to taste

Directions

Step 1

In one bowl, beat the eggs. In another, mix breadcrumbs and Parmesan. Dip each eggplant piece into the egg, then coat in the breadcrumb mixture.

Step 2

Preheat oven to 400°F (200°C). Place breaded slices on a baking sheet lined with parchment. Lightly drizzle or spray with olive oil. Bake for 20 minutes, flipping halfway through, until golden and crispy.

Step 3

Top each cooked bite with a small spoonful of marinara and a sprinkle of mozzarella. Return to the oven or place under a broiler just until the cheese melts.
