Ingredients

  • 1.75 lb Pure Flavor® Baby Eggplants, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 2–3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • Salt to taste
  • Green onions, for garnish
  • Sesame seeds, for garnish

Directions

Step 1

Heat oil in a large pan or wok over medium-high heat. Add eggplant and stir-fry for 5 minutes until browned and tender.

Step 2

Add garlic, soy sauce, oyster sauce, and sugar. Stir well until everything is coated and fragrant.

Step 3

Garnish with green onions or sesame seeds if desired. Serve hot with rice.
