Ingredients

  • 1 dry pint Pure Flavor® Cloud 9® Bite-Sized Fruity Tomatoes, quartered
  • 4 slices sourdough bread
  • 4 tbsp creamy goat cheese
  • 2 tbsp balsamic glaze
  • 1 tbsp capers
  • 1 tbsp pomegranate seeds
  • Fresh thyme for garnish

Directions

Step 1

Put oven on broil. Place sourdough bread slices on a baking sheet and put under the broiler for 2.5 minutes (or less if you want your bread less toasted) and flip the bread and toast for another 2.5 minutes. Remove from the oven.

Step 2

Spread goat cheese evenly on each slice of toasted bread. Top with tomatoes, capers and pomegranate seeds.

Step 3

Lightly drizzle with balsamic glaze. Serve with fresh thyme garnish on top.
