Ingredients

  • 6 count Pure Flavor® Sweet Bell Peppers, chopped
  • 2 small red onions, quartered
  • 1 large zucchini, chopped
  • 1 sweet potato, chopped
  • 2 cups spinach
  • 1 cup quinoa, cooked
  • 1 cup chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 3 tsp red wine vinegar
  • Salt to taste

Directions

Step 1

Preheat the oven to 350°F. Place peppers, onions, zucchini, and sweet potatoes on roasting tray, drizzle olive oil and roast for 35 minutes. Set aside.

Step 2

In a medium bowl mix quinoa, chickpeas, and spinach. Add roasted vegetables and combine. Add vinegar and serve!
