This year, I’m exploring new flavors with my post-Thanksgiving meals. I recently tried Pure Flavor’s® newest cucumber, Uno Bites™ Nano Cucumbers, and I know exactly what recipe I’m going to make: Cucumber Turkey Salad.

These little cucumbers are not only the perfect grab and go snack for all ages, but they’re also packed with potassium and Vitamin K – plus, they’re 95% water so they are sure to keep you hydrated!
Ever since their first crunch of these cucumbers, my kids have already been taking a pack with us on our long walks or grabbing them from our refrigerator when they need a little snack in between meals. What mama wouldn’t like a snack like that?!
My very favorite thing about this new product is how convenient they make getting veggies into your diet! With such a small size – these are the smallest cukes I’ve ever tried! – they don’t even need to be cut for older toddlers.
With my latest Cucumber Turkey Salad Recipe, I think I’ve come up with the perfect way to use these little cucumbers this Thanksgiving season. If you find yourself the day after searching for something delicious to make with all of the extra leftover turkey, look no further!
Start by shredding your leftover turkey and chopping Uno Bites™ to your desired size. Use a hand mixer to shred your meat – yes, really! It gives you the perfect consistency for the salad and makes prep work a breeze.
Then, mix together 1 teaspoon each of dill, salt and pepper together in a small bowl with about a cup of mayo.
Now, all that’s left is to simply combine the chicken, cucumbers and mayo with one cup of dried cranberries and a half cup of chopped pecans.
I recommend serving with a variety of sides so that everyone at your table can make the lunch they desire! Some of my favorites are a mix of snacking veggies like Aurora Bites Mini Sweet Peppers and Sangria® Medley Tomatoes, crackers, chips, fruits, and paleo sandwich bread. Doesn’t that just get your mouth watering?!
