Ingredients
- 1 dry pint Azuca™ Red Cherry Tomatoes, halved
- 1 red onion*, diced
- 1 garlic clove*, minced
- ½ lemon, juiced
- 3 cups okra, sliced
- 2 tbsp olive oil*
- ½ tsp ground coriander
- ½ tsp curry powder
- ¼ tsp chili flakes*
- Salt & pepper*, to taste
- Cilantro, for garnish
- Pita bread, for serving

The Process
1 Heat oil in a skillet over medium-high heat; cook onion 2 minutes.
2 Stir in garlic, coriander, curry powder, and chili flakes; cook 1 minute.
3 Add okra; sauté 5 minutes. Stir in lemon juice; reduce heat to medium and cook 2 minutes.
4 Add tomatoes; cook 2 more minutes. Season with salt and pepper.
5 Garnish with cilantro and serve with warm pita bread.
