The Process

1   Slice tomatoes and place in a bowl; add bocconcini.

In a small bowl, mix oregano, salt, pepper, and sugar; stir in malt vinegar and olive oil.

3   Pour mixture over tomatoes and mozzarella; toss gently.

4   Cover and refrigerate 24 hours. Garnish with basil before serving.
