1 Season the chicken with salt and pepper.
2 Heat 1 tbsp olive oil in a large skillet over medium-high. Add chicken and cook 4 minutes per side until golden.
3 Continue cooking, flipping occasionally, 3–5 minutes until internal temp reaches 165°F. Remove and cover to keep warm.
4 In the same pan, reduce heat to medium. Add 1 tbsp olive oil, onion, and cook 3 minutes until softened. Add garlic, cook 30 seconds.
5 Stir in tomatoes, capers, vinegar, honey, and remaining salt and pepper. Cook 2 minutes until tomatoes soften.
6 Return chicken to pan, top with parsley, and serve.
