In a bowl, mix red wine vinegar, shallot, peppercorns, honey, salt, dill, and cucumbers.
Set aside for 15 minutes.
Cook hot dogs as desired.
Open the bun and fill with cheese slices, hot dog, tomato slices, quick pickles, and finish with aioli.
