Ingredients

  • 4 Pure Flavor® Solara® Melons
  • ½ red onion, finely chopped
  • 2 cups jicama, peeled and cubed
  • 2 tbsp lime juice
  • ½ tsp salt
  • Lime, optional for garnish
  • Fresh mint, optional for garnish

Directions

Step 1

Halve the melons, scoop out the seeds and cut into cubes.

Step 2

Combine all ingredients in a medium sized bowl and stir well.

Step 3

Garnish with lime and fresh mint if desired.

Pro Tip

This recipe is best after a couple of hours in the fridge to really let the sweet and salty flavors combine.
