Ingredients

  • 1 Pure Flavor® Red Bell Pepper, thinly sliced
  • 1 Pure Flavor® Orange Bell Pepper, thinly sliced
  • 1 Pure Flavor® Yellow Bell Pepper, thinly sliced
  • ½ red onion, thinly sliced
  • ½ cup cilantro, chopped
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • ⅓ cup crumbled feta cheese
  • Salt and pepper to taste

Directions

Step 1

Mix bell peppers, onion, cilantro, rice vinegar and oil.

Step 2

Gently fold in feta cheese.

Step 3

Season to taste with salt and pepper.
