- 1 Pure Flavor® Red Bell Pepper, thinly sliced
- 1 Pure Flavor® Orange Bell Pepper, thinly sliced
- 1 Pure Flavor® Yellow Bell Pepper, thinly sliced
- ½ red onion, thinly sliced
- ½ cup cilantro, chopped
- 2 tbsp rice vinegar
- 1 tbsp olive oil
- ⅓ cup crumbled feta cheese
- Salt and pepper to taste
Mix bell peppers, onion, cilantro, rice vinegar and oil.
Gently fold in feta cheese.
Season to taste with salt and pepper.
