- 6 ct Pure Flavor® Sweet Bell Peppers, diced
- 1 lb Pure Flavor® Tomatoes On-The-Vine, diced
- 1 yellow onion, diced
- 2 lbs chicken thighs
- 1 lb cremini mushrooms, diced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 3 tsp minced garlic
- 2 tsp Italian seasoning
- 1 tsp kosher salt
- ½ tsp black pepper
- Parsley, chopped for garnish
- Crusty loaf, optional for serving
Combine all ingredients in the slow cooker.
Cook on HIGH for 4 hours until the chicken is fully cooked.
Garnish with parsley. If desired, serve with bread.
You can adjust the cooking time based on your slow cooker settings to make this dish on LOW for 6-8 hours.
