Ingredients

  • 6 ct Pure Flavor® Sweet Bell Peppers, diced
  • 1 lb Pure Flavor® Tomatoes On-The-Vine, diced
  • 1 yellow onion, diced
  • 2 lbs chicken thighs
  • 1 lb cremini mushrooms, diced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3 tsp minced garlic
  • 2 tsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Parsley, chopped for garnish
  • Crusty loaf, optional for serving

Directions

Step 1

Combine all ingredients in the slow cooker.

Step 2

Cook on HIGH for 4 hours until the chicken is fully cooked.

Step 3

Garnish with parsley. If desired, serve with bread.

Pro Tip

You can adjust the cooking time based on your slow cooker settings to make this dish on LOW for 6-8 hours.
