Ingredients

  • For the salad:
  • 1 Pure Flavor® Sweet Bell Pepper, chopped
  • 1 dry pint Pure Flavor® Sangria® Medley Tomatoes, halved
  • 4 green onions, sliced
  • 16 oz kidney beans, rinsed and drained
  • 15 oz black beans, rinsed and drained
  • 3 cups basmati rice, cooked
  • 1½ cups frozen corn, thawed
  • ¼ cup fresh cilantro, chopped for garnish
  • For the dressing:
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 garlic clove, minced
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ¼ tsp pepper

Directions

Step 1

In a large bowl, mix the salad ingredients.

Step 2

In a small bowl, mix the dressing ingredients and add to the large bowl.

Step 3

Garnish with cilantro and chill until serving..
