Ingredients

  • 3 Pure Flavor® Bell Peppers, diced Red, Yellow & Orange
  • 2 potatoes, cut into ½-inch cubes
  • 4 eggs
  • 1 tbsp olive oil
  • 1 tbsp parsley, ripped
  • Salt and pepper, to taste

Directions

Step 1

Heat skillet on medium-high with olive oil. Add potatoes and cook for 5 minutes. Add peppers. Cook until softened, about another 5 minutes.

Step 2

Crack all 4 eggs into skillet and cook another 5 minutes until eggs are done sunny side up. Season with salt and pepper and torn parsley before serving.
