- 3 Pure Flavor® Bell Peppers, diced Red, Yellow & Orange
- 2 potatoes, cut into ½-inch cubes
- 4 eggs
- 1 tbsp olive oil
- 1 tbsp parsley, ripped
- Salt and pepper, to taste
Heat skillet on medium-high with olive oil. Add potatoes and cook for 5 minutes. Add peppers. Cook until softened, about another 5 minutes.
Crack all 4 eggs into skillet and cook another 5 minutes until eggs are done sunny side up. Season with salt and pepper and torn parsley before serving.
