Ingredients

  • ½ cup Pure Flavor® Bell Pepper, diced fine (set aside 2 tbsp)
  • 6 Hard boiled eggs
  • 1-2 Slices of bacon
  • 1 Avocado
  • juice and zest of one lime
  • 1/3 cup Wasabi sauce
  • 2 tbsp cilantro
  • 2 tbsp red pepper flakes
  • ½ tsp cumin
  • salt to taste
  • ¼ tsp smoked paprika

Directions

Step 1

Boil and cool your eggs. When cool, peel and set aside.

Step 2

Cook your bacon, cool and chop into 1/2 inch size pieces to be used for garnish.

Step 3

Cut eggs in half, scoop out yolks, and place in a food processor. Add all remaining ingredients except bacon, 2 tbsp of diced bell pepper, and paprika. Blend until smooth.

Step 4

Spoon or pipe mixture into the egg halves.

Step 5

Garnish with bacon and diced bell pepper, sprinkle with paprika.

Pro Tip

If you aren't a fan of spicy - leave out the red pepper flakes and reduce the Wasabi sauce by 2 tbsp.
