Looking for a weeknight meal that is as delicious as it is easy to make? This Pepper Sausage Skillet created by our friend Elizabeth Jordan-Flight, is a true one-pan wonder that will be sure to earn its place on your weekly meal rotation.

With school back in session for the New Year I am constantly on the hunt for delicious, quick, wholesome recipes that my family will love. This Pepper Sausage Skillet is one of our favorites! Not only does it cut down on dishes because it can all be made in one skillet, but it’s perfect for warming up on cool winter nights.

Great for Meal Prep –

During the busy week, taking my kids to extracurricular activities, I have less time to make lunches for my family. With this recipe, I can spend one night making this meal and have it available for a week’s worth of breakfast, lunch, or dinner! It is a great dish to use for your weekly meal prep. Just remember to store in an airtight container for maximum freshness.

Using just one pan and a few simple ingredients, this recipe is easy to customize and can be doubled or even tripled for a crowd. It is naturally gluten-free and if you use sugar-free sausage works great for a Whole30 or Paleo diet.

What You’ll Need –

Equipment:

  • Cutting board
  • Chef’s knife
  • Large skillet, preferably cast iron

Ingredients:

  • Sweet peppers: The sweeter the better when it comes to this dish! I highly recommend using Pure Flavor® Aurora Bites Sweet Mini Peppers.
  • Baby potatoes: I recommend using a small waxy potato such as Yukon potatoes. If they are small you can cut them into quarters.
  • Onion: A white or yellow onion works great.
  • Garlic: Fresh garlic is always best!
  • Smoked sausage: While you can use your favorite brand, I recommend polka kielbasa-style sausage.
  • Chicken broth
  • Olive oil
  • Italian seasoning, garlic powder, onion powder, paprika, salt & pepper
  • Fresh parsley

Directions:

1. Heat olive oil in a cast iron skillet over medium-high heat. Add potatoes and season with salt & pepper. Cook for 12 minutes until tender and golden. Remove the potatoes to a plate and set aside.

2. Add kielbasa to the pan and cook over medium until browned for about 5 minutes. Add onions, peppers, garlic, and seasonings. Cook for 5 more minutes then, deglaze the pan with chicken broth. Cook until vegetables are tender and broth is reduced.

3. Add potatoes back into the pan and stir to combine. Season with salt and pepper to taste.

4. Garnish with fresh parsley to serve and enjoy!

Get Creative With Your Ingredients –

What makes this fun, is that you’re able to customize this recipe as desired. Swap the peppers for some Sangria® Medley Tomatoes to add that same color to the dish. Or dice up some Organic Tomatoes On-The-Vine for that extra bit of nutrients and additional flavor. The combinations are endless!

Since this recipe utilizes sweet peppers, there isn’t much spice to this dish. It’s great for my picky kids who will only eat certain meals. To be able to have the saltiness of the potatoes, sweetness of the peppers, and heartiness in the sausage, it is a meal great for all. However, if you’d like to take the heat up a notch you can throw in a diced Craft House Collection® Shishito Pepper or some red pepper flakes.
