Not to worry, we’ve rounded up this summer’s hottest salads for you to dive into! We’ve loaded them with fresh greenhouse grown vegetables to make them even healthier and laid out how to make them yourself! It’s time to dig in and #flavorUP!

WHAT’S ALL THE BUZZ ABOUT?

In the heart of summer, fresh vegetables are always on everyone’s tables and if you are having people over for a bbq, there is guaranteed to be a salad or two on the menu. With the latest craze of anything and everything being made into some sort of salad, we decided to try the latest trending ideas & viral recipes and load them with greenhouse grown vegetables! Don’t be caught off guard while you’re catching up with friends and they are all raving about the ‘Green Goddess Salad‘ that they made last night after their hot girl walk. Be in the know about this summer’s hottest salads that are anything but boring and are definitely worth the hype!

THE GREEN GODDESS SALAD –

If we’re talking about trending salads this one had to be at the top of our list! This salad is everywhere and there’s a reason it went viral! This Green Goddess Salad is our version of Baked by Melissa’s viral Green Goddess Salad recipe. To make this you’ll start by thinly slicing Pure Flavor® Poco Bites® Cocktail Cucumbers, and thinly chopping green onions and cabbage and place all in a large bowl. 

To make the iconic green dressing, add garlic, pearl onion, baby spinach, basil, grated parmesan cheese, olive oil, cashews, lemon juice, rice vinegar, and salt to a food processor and pulse. Pour your dressing all over the prepared vegetables and toss to combine. Top with chili flakes for garnish. This salad is super tasty when dipped with tortilla chips because the thinly sliced vegetables make it super easy to scoop up. You’ll wonder why you never dipped chips in a salad before! It’s great for making in advance because the cabbage holds it’s texture and doesn’t get soggy! There has been a lot of buzz online about the fact that Jennifer Aniston ate the same salad every day for TEN years when she was filming Friends. So naturally, we were curious and had to try to make it ourselves. If someone eats the same salad for ten years, it must be good, right? This Cucumber Bulgur Salad is our version of what’s known on TikTok as the “Jennifer Aniston Salad”. This salad is well balanced and made with Poco Bites®  Cocktail Cucumbers, red onions, chickpeas, bulgur, fresh herbs, pistachios, and feta cheese. We made our version plant-based but that doesn’t mean it lacks in protein! The bulgur and chickpeas add a ton of protein to this dish, however, if you wanted to make this dish with even more protein, turkey bacon tastes delicious in it as well. The blend of chopped herbs like parsley, mint, and dill adds a ton of fresh, natural flavor to this salad. Most of the ingredients are finely chopped and tossed, allowing you to taste all the flavors in every bite! Once you try it, you’ll understand why one of the most famous actresses ate this salad every day! 

HEALTHY SUMMER SALAD –

The Healthy Summer Salad is our version of the viral “Hot Girl Salad” that’s all over social media. We changed it up a bit because and asked ourselves…what’s better than being hot this summer? Being healthy and fuelled with greenhouse grown vegetables of course! Tiktok creator @herdresscode has gotten millions of views for her “Hot Girl Summer Salad” recipe. Since, there have been many variations of this salad going around and so we knew we had to make our own version. Aurora Bites Mini Sweet Peppers and Uno Bites™ Nano Cucumbers are the perfect vegetables for this recipe. You’ll also need hard-boiled eggs for your protein, red onion, Italian dressing, pepperoncini, sunflower seeds, and a few spices. Toss all of these ingredients in a bowl to make a perfect low-calorie salad for summer that will give you the fresh & healthy kick you are looking for!

MEDITERRANEAN SUMMER SALAD –

People are always looking for insight into celebrities’ diets and their workout routines as inspiration on how to live a healthier life themselves. Thanks to social media, we now have more access to behind the scenes of celebrity lives and routines than ever before! This makes it even easier to try and eat what the stars eat at home since we can get a glimpse as to what they eat regularly. Bella Hadid shared her favorite salad recipe on TikTok that got a lot of attention for just how easy it is to make. This Mediterranean Summer Salad is our version of the “Bella Hadid Salad” using Poco Bites® Cocktail Cucumbers and only 4 other main ingredients. Don’t be fooled, that doesn’t mean this salad lacks in taste, it is so yummy! To make this salad on your own combine arugula, cucumbers and sliced Red Sweet Bell Peppers in a large bowl. Add lemon juice, olive oil, and salt and toss together. To serve, top with avocado, Parmesan cheese, and balsamic glaze. It’s that easy!
