That’s why I’m excited to share with you one of my all-time favorite dinner recipes that perfectly aligns with your fitness goals – One-Pan Salmon with Sangria® Tomatoes.

What You’ll Need –
- 1-pint Pure Flavor® Sangria® Medley Tomatoes, whole
- 2 salmon fillets
- 1 lemon
- ½ white onion, chopped
- 2 garlic cloves, chopped
- 4 spring thyme
- 1 tbs olive oil
- Salt and pepper to taste
How You’ll Make It –
- In a nonstick skillet, add 1 tbsp of olive oil. Place the salmon fillets and season with salt and pepper. Cook on medium-high heat until crispy on each side. Remove salmon and set aside, covered.
- Add Sangria® Medley Tomatoes with the remaining oil, sear until burst. Then, add in the onion and garlic. Season with salt and pepper to taste.
- Next, incorporate thyme and 1 tbsp of lemon zest. Mix well until everything is combined.
- Reintroduce the salmon and cook for an additional 5 minutes until fully cooked. Top with more thyme and a slice of fresh lemon. Enjoy this nutrient-packed, high-protein delight!
