If you’re really feeling inspired to make something delicious to eat, Le Petit Chef’s latest Fresh Veggie Quesadillas recipe is going to satisfy your craving for culinary creativity. It has three out of four Craft House ingredients – that means it’s packed with incredible, bold flavor.
In this vegetarian quesadillas recipe, you make a fresh pico de gallo totally from scratch using Craft House Shishito Peppers and Mini San Marzano Tomatoes. It’s the perfect topping to adorn the extra cheesy quesadillas, stuffed with roasted Aurora Long Sweet Peppers.
This recipe is incredibly simple to make, but a few expert flourishes will turn it into an outstanding, showstopping, Instagrammable feast.
To make Le Petit Chef’s recipe for Fresh Veggie Quesadillas, start by chopping up the fresh ingredients for your pico de gallo: Shishito Peppers, Mini San Marzano Tomatoes, onion and cilantro.
Stir these together in a bowl with lime juice and add a pinch of salt. Make sure you taste it and then add more cilantro, lime or salt if you feel it needs a little more. This is where you’ll soon learn that cooking is really an art form!
Then, place Aurora Long Sweet Peppers on a baking sheet directly under your oven broiler. Watch them closely and when they begin to blister, rotate them. Keep broiling until the peppers are charred on all sides.
Remove the peppers and place them in a sealed plastic bag. This is quick trick chefs use, but many people don’t know about. The humidity in the bag will cause the peppers to peel more easily, letting you get to the soft and savory flesh.
After ten minutes, you can open the bag and peel the peppers. Cut them open and remove the seeds before thinly slicing them.
For the quesadillas, spread Monterey Jack cheese on two tortillas. Layer on the sliced Long Sweet Peppers and then top each with another tortilla. Meanwhile, heat a large skillet over medium heat and add a knob of butter. Once the butter has melted, fry up your quesadillas and cook for two to three minutes per side.
Finally, remove the veggie quesadillas from the pan, slice into wedges and top with your fresh Shishito Pepper Pico de Gallo.
