Just ask Mary Harp from Healthy Christian Home. Mary is a mom to two young boys and she knows how important it is to get the kids involved in making after-school dinner fun. Her new Mini Pepper Pizzas recipe is a great way to let your kids express themselves and explore with their tastebuds.

To make Mary’s recipe, you can start by setting the scene in your kitchen: clear a large area for the kids to really get creative – and, quite possibly, a bit messy! Don’t worry, it’s all part of the fun. Besides, at least you won’t have to worry about dough getting stuck to the table or your kids spraying flour all over the kitchen (and themselves)! This recipe doesn’t have any dough; that means it’s totally gluten free, low carb and nutrient dense!

Slice your mini peppers in half, empty the insides and put in a large bowl. In smaller bowls, put everyone’s favorite pizza ingredients: pepperoni, olives, mozzarella, bacon bits, onion, mushrooms and maybe even pineapple (we won’t judge, we promise).

This is the fun part. When class is over and their little tummies start rumbling, call them to the table and have some fun.

Add one spoonful of pizza sauce inside each pepper and top with mozzarella cheese. Then, let your kids choose their favorite toppings. Every single bite-sized pizza can be totally unique. At the end of the day, you’re letting them have fun making their own healthy choices ­and that’s something to celebrate!

Place each Mini Pepper Pizza on a baking sheet lined with parchment paper, making sure to keep everyone’s unique creations separate – you don’t want this to break out into a food fight. Bake in the oven at 425º F for 10 to 15 minutes. You’ll know they’re ready when the cheese starts to bubble and turns golden brown.

Remove them from the oven and serve as soon as they’ve cooled down enough to enjoy. Don’t blink – they’ll be gone before you know it!
