You never have to hem and haw about what to make and you can get into a good rhythm that helps you save time. Sometimes, though, you need a change!

I’ve put together a recipe for Chicken Salad Wraps with cucumbers and peppers that you can prepare early in the week for multiple lunches. It’s a wrap, it’s a salad, and it’s delicious.

These Chicken Salad Wraps are great for taking to the office in a hurry. Kids also love them, so when you’re meal prepping for yourself, you can also make some to take on family trips, bike rides, picnics, and beach days.

This recipe all started with my new obsessions for green olives, a random craving I’ve been having now that I’m pregnant with my fourth child. I tried them once in my lunch and then proceeded to eat two packages as an afternoon snack. If you’ve been pregnant, you know the feeling!

I’ve always loved chicken salad, but usually keep it pretty traditional with a combination of mayo, grapes and celery. My new love for green olives had me wanting to experiment a bit, so I added in two of my favorite fresh veggies: Pure Flavor® Poco Bites® Cocktail Cucumbers and  Aurora Bites Mini Sweet Peppers.

The flavorful and fresh ingredients make this such a kid-friendly lunch.

Personally, I am planning to serve this as an option on Independence Day weekend as a salad. I’m also really looking forward to having another lunchbox wrap option for lunch at the park!

These Mini Sweet Peppers come in bright yellow, orange and red, giving this creamy dish a bright pop of color. The flavor they bring to every dish is just as vibrant! Each bite-sized pepper contains natural sweetness to brighten your day. You’ll want to snack on them all day – especially when preparing your Chicken Salad Wraps!

So, get your bowl of fresh snacking peppers and cucumbers ready – it’s time to make some lunch!

The salad itself is incredibly simple and straightforward. If you want to make your own homemade chicken, you can grill, bake or fry – it’s all about your personal preference.

One of the biggest tips I can give you here is to invest in a meat tenderizer. I spent many years being frustrated by chicken that ended up undercooked in the middle and burnt on the ends. I always end up with perfectly cooked, tender, juicy chicken breasts when I use the tenderizer. Of course, if you prefer to go with a quicker option, you can buy pre-cooked chicken breast and chop it up into small pieces.

Then, combine the chicken with chopped Poco Bites® Cocktail Cucumbers, Aurora Bites® Mini Sweet Peppers, sliced manzanilla olives and chopped red onion. In a separate bowl, mix mayonnaise with ranch seasoning and then combine it with the rest of the salad mixture. I make my own seasoning with a combination of onion, garlic, parsley and chives.

Now that you’ve mixed the salad, you’re pretty much all done. I am a huge fan of meal prepping on weekends so that I don’t have to do any real prep for lunches or dinners during the week. With pregnancy stealing all my energy this time of year, I’ve needed more quick and easy recipes that I can make while multitasking with three littles around my feet.

If you want to prepare this salad in multiple portions to enjoy throughout the week for lunch, you can either save the mixture in airtight containers or you can save the ingredients in containers and mix them together in the morning before leaving for your adventure.

When you’re ready to enjoy your Chicken Salad Wraps, scoop a large spoonful or two into the centre of a tortilla and wrap it like a burrito or tie it with twine for a more elegant presentation. Your lunch is now ready to enjoy – that’s a wrap!

To make these Chicken Salad Wraps portable for a healthy on-the-go lunch option, wrap them in cling wrap or sandwich paper. Make sure to also pack a bag of Aurora Bites Mini Sweet Peppers and Poco Bites® Cocktail Cucumbers. You can include hummus, tzatziki or another favorite dip to enjoy with your lunch.
