Megan Hutson, a mom of three young children from @mamaofwholelittles, shares with us her healthy new breakfast casserole recipe that’s a hit with her family and can be for yours too!

With three kids under the age of five at home, I’ve had to learn a lot of lessons when it comes to meal planning. One of the biggest things you can do as a parent is prepare meals in advance – and that includes breakfast!

I don’t like to wake up with three hungry kiddos and no plan. It’s important to me that my family eats healthy, whole foods for every meal, but on busy mornings, it can be all too easy to resort to popping processed foods in the toaster or microwave. My solution for those mornings is to have this kid-favorite Taco Breakfast Casserole ready to go first-thing!

There is nothing I love more in the morning than waking up to the realization that breakfast is already made! For real, nothing!

I’ve found that the best way to get all the nutrients my kids need in their first meal of the day is a breakfast casserole loaded with fresh veggies. There’s just something so satisfying about this tasty combination of crispy potatoes, taco seasoned meat, eggs, and Pure Flavor® Aurora Bites Mini Sweet Peppers baked to perfection that makes your mouth water.

As much as we all love a good, hearty breakfast, nobody wants to set their alarm 45 minutes early to get in the kitchen. Besides, I think we can all agree it’s a good idea to wait for that first cup of coffee to kick in before cooking anything! For this exact reason, I created this Taco Breakfast Casserole and I hope you will also find it just as delicious as my family does!

Since I transitioned to a whole foods diet five years ago, I’ve tried many breakfast casseroles; none – absolutely none – compare to this one. There are two reasons why this breakfast casserole recipe is a family favorite: it keeps in the fridge or freezer perfectly, and the sweet flavor of Aurora Bites Mini Sweet Peppers add a unique freshness!

My kids love the sweet flavor of Aurora Bites, but my favorite part is how healthy they are.  Did you know that these mini sweet peppers contain more Vitamin C than an orange? I try to include them in all kinds of different meals throughout the week. Sometimes, I bring them out for a lunch snack either on their own, with cheese and crackers, or with my kids’ favorite dips.

When I make this casserole, I start with the potatoes – the base for this recipe. I always cook the potatoes until they are a crispy golden brown before adding the remaining ingredients to the casserole dish. When it’s in the oven, I have time to prep all the other ingredients. By cooking the shredded potatoes twice, you are guaranteed to have a perfectly crispy crust to your breakfast casserole.

Once this base is crisped up, it’s time to add in the layer of veggies with taco-seasoned pork. Pork is my favorite to use instead of red meat because of its high protein and delicious juiciness that you just don’t get with chicken or turkey.

For veggies, we chop up our favorite Aurora Bites with onions, garlic and kale. I don’t think I can make a casserole without adding healthy greens anymore – and why would I want to? They’re so incredibly flavorful! Fry this all up in a large skillet and then pour it into your casserole dish. Layer salsa overtop for extra taco flavor!

Now, it’s time to whisk up the egg mixture. Combine eggs, coconut milk (for extra creaminess & healthy fats) and nutritional yeast, my secret ingredient to keep this recipe dairy-free. I love the “cheesy” flavor that comes from the amazing nutritional yeast, but feel free to add the same amount of your preferred cheese blend to this dish.

All these amazing parts are layered together – crust, pork & veggies, salsa and eggs; pop it in the oven at 400°F and bake for 30 minutes. When the timer dings, you can let this cool down before putting it in the fridge or freezer to enjoy tomorrow or whenever you need a quick and healthy breakfast for the family. When it’s time to serve, warm it up quickly in the microwave or toaster oven and top with salsa or guacamole.
