Preheat over to 425º F and line a baking tray with parchment paper.
Cut mini sweet peppers in half lengthwise, remove seeds and arrange on the tray.
Add a spoonful of pizza sauce inside each mini sweet pepper. Top with mozzarella cheese. Add any additional pizza toppings you would like. Sprinkle with parmesan, if desired.
Bake for 10-15 minutes until cheese is golden brown and bubbly. Serve immediately.
