  • 1.5 lbs Pure Flavor® Mini Cucumbers
  • 1 Pure Flavor® Beefsteak Tomato
  • ½ red onion, finely diced
  • 1 package of dried Italian salad dressing mix
  • 1 avocado, peeled and diced
  • 1 large mango, diced


Step 1

Peel, seed and dice tomato.

Step 2

Peel, split lengthwise, seed and dice cucumbers.

Step 3

Thoroughly drain all liquid from tomato and cucumber.

Step 4

Mix all ingredients and chill before serving.

Step 5

Serve with chips or vegetables, or use as dressing for chicken salad.

I am in love with this recipe using your fresh and crunchy mini cucumbers. I am a seasoned cook and it took me way more time than 10 minutes to peel and chop. However, it was well worth my time! My husband and I tried on a tortilla chip, and he wanted a bowlful. It needed to chill though...This will be a tasty and healthy Super Bowl snack, as well as added to my keeper recipes for sharing at gatherings, potlucks, etc...when able to do so.
