- 12 oz Pure Flavor® RedRoyals® Sweet Cherry Tomatoes On-The-Vine, halved
- ½ lb spaghetti
- ½ cup onion, diced
- ¼ cup olive oil
- 4 garlic cloves, 2 minced & 2 diced
- 1 handful fresh basil, chopped
- 1 tsp Italian Seasoning
- ¼ tsp salt
- 1 pinch of black pepper
- Lemon zest, optional
Preheat oven to 350°F.
Cook the spaghetti according to the package directions.
While the spaghetti is cooking, mix olive oil, minced garlic, Italian seasoning, and salt in a small bowl. Add a quarter of the tomatoes in and stir to coat. Spread the mixture on a parchment lined baking sheet and bake for 30 minutes, reserving some of the olive oil mixture.
In a pan over medium-high heat, warm the remaining olive oil mixture, add onion and garlic, then sauté for 2 minutes.
In a food processor, blend the remaining tomatoes and then add them to the pan. Continue cooking until the oil separates on the top. Add the baked tomatoes, cooked spaghetti, and fresh basil, then toss gently to combine.
Serve immediately with extra basil and lemon zest, optional.
