Ingredients
- Salad
- 10 Pure Flavor® Marzanito Mini San Marzano Tomatoes, sliced
- 2 cups cooked quinoa
- ¾ cup chopped kale
- 3 sprigs of green onion, chopped
- Dressing
- ½ cup olive oil
- ½ cup lemon juice
- 1 tsp salt
- ¼ tsp pepper
- ¼ cup mint leaves, finely chopped
Directions
Step 1
Combine quinoa, kale, green onion and tomatoes in a bowl.
Step 2
Add dressing ingredients to a small bowl and stir to combine.
Step 3
Pour dressing over salad and mix.
