Ingredients

  • Salad
  • 10 Pure Flavor® Marzanito Mini San Marzano Tomatoes, sliced
  • 2 cups cooked quinoa
  • ¾ cup chopped kale
  • 3 sprigs of green onion, chopped
  • Dressing
  • ½ cup olive oil
  • ½ cup lemon juice
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ cup mint leaves, finely chopped

Directions

Step 1

Combine quinoa, kale, green onion and tomatoes in a bowl.

Step 2

Add dressing ingredients to a small bowl and stir to combine.

Step 3

Pour dressing over salad and mix.
